Dinner for family

Big one for hubbilcious, little one for bubs and the one on the scales for me.

Brown rice, veg from the veg stash and chicken cooked in ginger, garlic and chinese 5 spice with a tiny dash of chilli oil to give a little kick.  I weighed out my veg and then my chicken and threw them back into the pan together to heat through and mix thoroughly just as if they were cooked together originally.

I am really pleased how differently this tasted from last night which was pho noodles, veg and shrimp with coriander. Amazing what a little herbs and spices will do.

So I feel confident now in having a big vegie stash in the fridge to draw from as the base of each meal and then just change up the carbs and protein and the spice.  I will alternate with a big salad stash for some variety.  Saves a heap of time too and that is great for organising dinner around bubs bedtime etc.

I have a heap of pumpkin that I want to use this week so I will look at some options - perhaps some pumpkin sauce for gnocchi or some other pasta. Perhaps another pasta as gnocchi is so dense it will use up all the carb grams for only a few pieces.

  1. Wow Tracey that all looks and sounds delicious. I agree, the stash of veg helps a lot, especially when I run out of one I supplement with another. I have exactly the same set of scales. Costco perchance?

For pumpkin, it is actually nice cold if you add it to salads. Just cut it up into cubes. I now add sweet potato to my salads too.

  2. Yes Costco - reminds me I need to put an order in again soon. Need more brown rice. I prefer it to white rice.

Also gotta find some pita bread or other interesting grainy breads as the sweet soft stuff that dissolves in your mouth is just vile.
